July 4th: Our Grand Opening Was One for the Books

Dead Center Cantina officially opened its doors (or rather, rolled out its kitchen!) and we couldn’t have asked for a more amazing welcome. From the moment we fired up the grill, the flow of locals and visitors was nonstop—smiling faces, hungry bellies, and a whole lot of love.
We’re beyond thrilled (and honestly still catching our breath) to share that we completely sold out! Every taco, every chip, every bite of our handcrafted Mexican cuisine was met with enthusiasm and support. The energy was electric, the vibes were festive, and the community showed up in full force to celebrate not just Independence Day, but the beginning of something special.
To everyone who stopped by, waited patiently in line, cheered us on, and shared kind words—thank you. Your support means the world to us. We built Dead Center Cantina with the dream of serving our hometown with heart, flavor, and flexibility, and today was the perfect start.

This past weekend, Dead Center Cantina had the absolute pleasure of serving at the North Fork Fall Festival—and wow, what a turnout! From the moment we fired up the grill, the energy was electric. Families, friends, and festival-goers came out in full force, and the support from our community was nothing short of incredible.
We’re proud to say we sold out of everything! It was a whirlwind of flavor, laughter, and connection, and we couldn’t be more grateful to everyone who stopped by, shared a smile, and supported our mobile kitchen.
Even more exciting? Thanks to your enthusiasm and appetite, we’re able to make a generous contribution to the North Fork PTA. Supporting local schools and families is at the heart of what we do, and it means the world to us to give back in a meaningful way.

A Bump in the Road—But We're Still Rolling

At Dead Center Cantina, we’ve always believed in showing up for our community—with great food, warm smiles, and a whole lot of heart. That’s why we want to be open with you about a recent challenge we’ve encountered.
We recently had an unexpected interaction with Madera County officials that brought to light a regulation we were previously unaware of: mobile food vendors are only permitted to operate in one location for a maximum of one hour at a time. While we’ve always strived to follow all local guidelines, this clarification has required us to take a step back, reevaluate our operations, and make some important adjustments.
Is it a curveball? Absolutely. But if there’s one thing we’ve learned as a mobile kitchen, it’s how to pivot with purpose. We’re actively exploring new ways to stay compliant while continuing to serve the community we love—whether that means shorter pop-ups, more frequent stops, or expanding our catering and event services to stay connected with you.
We’re grateful for your continued support, patience, and encouragement as we navigate this shift. Our commitment to fresh, from-scratch food and community connection hasn’t changed—it’s only grown stronger. We’ll keep you updated on our schedule and new service options, and we can’t wait to keep feeding you wherever and however we can.
